Özet

 Denaturing gradient gel electrophoresis (DGGE) analysis method was applied for the analysis of PCR products obtained from DNA extracted directly from the sausage/sucuk samples. Analysis of DGGE patterns and sequencing of the bands allowed profiling of the microbial populations present in the samples. The bacterial ecology was mainly characterized by the stable presence of Lactobacillus sakei and Wisella viridescens. Also several bacteria belong to Staphylococcus species were detected.
