The concentrations of cadmium, lead, chromium, nickel, copper, manganese, zinc, iron, and cobalt ions were determined in 38 traditional bread samples from different cities in Turkey by flame atomic absorption spectrometry (FAAS), after the wet digestion procedure. Accuracy was checked by the use of certified reference materials and additional recovery test studies. The concentrations of metals were observed in the range of 3.9-245.5, 3.4-47.6, 0.2-0.4, 1.0-12.5, and 3.7-43.1 mu g g(-1) dry weight (dw) for Mn, Fe, Cr, Cu, and Zn ions, respectively. The concentration of Pb was found in only one bread sample as 2.9 mu g g(-1) g dw; in the other samples, Pb level was found to be under the detection limit (DL) of FAAS. The concentrations of Co, Cd and Ni were below the DLs of FAAS in all analyzed samples. The results found were compared with values reported in literature.
