Coğrafi İşaretli Ürünlere Dayalı Gastronomi Rotası Önerileri: Kayseri İli Örneği

Özet
Bu çalışmanın amacı, Kayseri’ye özgü coğrafi işaretli yiyecekleri tarihî, kültürel ve doğal turistik çekiciliklerle bütünleştirerek teorik gastronomi rotaları geliştirmektir. Araştırmada nitel araştırma yöntemlerinden doküman analizi kullanılmıştır. Bu kapsamda Türk Patent ve Marka Kurumu Coğrafi İşaretler Portalı, Tripadvisor platformu ve Kayseri İl Kültür ve Turizm Müdürlüğünün resmî internet sitesinden elde edilen veriler incelenmiştir. TÜRKPATENT kayıtları doğrultusunda Kayseri’de 29 coğrafi işaretli yiyecek-içecek ürününün bulunduğu ve bunların 10 farklı ilçeye dağıldığı belirlenmiştir. Turistik çekicilikler, coğrafi işaretli ürünlerin bulunduğu ilçeler bazında sınıflandırılarak, ürün çeşitliliği, çekiciliklerin mekânsal dağılımı, ulaşım bağlantıları, karayolu mesafeleri ve tahmini ulaşım süreleri birlikte değerlendirilmiştir. Bu değerlendirme sonucunda üç teorik gastronomi rotası oluşturulmuştur. Bulgular, Kayseri’nin coğrafi işaretli ürünlerinin yalnızca kent merkezinde değil, çevre ilçelerde de önemli bir dağılım gösterdiğini ve bu ürünlerin farklı turistik çekiciliklerle ilişkilendirilebileceğini ortaya koymaktadır. Önerilen rotaların, uygulama öncesinde pilot testlerinin yapılmasıyla, destinasyon tanıtımına, turizmin çevre ilçelere yayılmasına ve yerel gastronomik değerlerin görünürlüğünün artırılmasına katkı sunabileceği değerlendirilmektedir.
The aim of this study is to develop theoretical gastronomic routes by associating Kayseri’s geographically indicated food products with its cultural and natural tourist attractions. Qualitative research method was used. The data obtained from Geographical Indications Portal of the Turkish Patent and Trademark Office, Tripadvisor platform and the official website of the Kayseri Provincial Directorate of Culture and Tourism were analyzed with document analysis. It was found that 29 food and beverage products with geographical indications are distributed across 10 different districts of Kayseri. The tourist attractions were classified by the districts where the geographically indicated products are located, and the product variety, spatial distribution of the attractions, transportation connections, distances and estimate travel times were assessed together. Three theoretical gastronomy routes were designed on this basis. The results reveal that the geographically indicated products of Kayseri are not concentrated in the city center but also to a great extent in the surrounding districts and these products can be associated with different tourist attractions. The proposed routes are expected to boost destination promotion, development of tourism in neighboring districts and local gastronomy, provided that they are tested through pilot studies prior to their implementation.
